FREEZE-DRIED COFFEE PRODUCTION PROCESS
The coffee is selected from high-quality coffee beans, which are cleaned of dust and impurities. After going through preliminary processing, the coffee beans are sent to the roasting machine, marking the first step of the instant coffee production process.
- Roasting the coffee: The coffee is roasted at a time and temperature standard to ensure the beans are evenly roasted from the inside out, without burning.
- Grinding the coffee: After roasting, the coffee is coarsely ground to prepare for the extraction phase.
- Extraction: This step extracts soluble substances and active ingredients from the coffee grounds using hot water to create an extract. The extraction process always occurs below 100°C to prevent changes in the coffee’s composition.
- Centrifugal filtration: This removes impurities during production, enhancing the quality of the instant coffee.
- Aroma recovery: The natural aroma of coffee beans is often lost during processing, so the recovered aroma after extraction is added back to the coffee powder during the drying stage.
- Concentration: The coffee extract is concentrated to 30-33% to prepare it for freeze-drying.
- Freeze-drying: The water in the coffee evaporates, leaving a high-concentration coffee solution. The solution is then cooled to -50°C, forming ice crystals. Through sublimation, the ice crystals are removed, leaving dry coffee granules, which are the freeze-dried coffee.
- Aroma restoration: The previously recovered aroma is re-added to the final instant coffee product.
- Storage and packaging: The final product is packaged and stored in standard conditions for preservation.
